Pasta Frittata – My Bizzy Kitchen


Or is this a pasta quiche?  I have no idea, but all I know is that it is delicious!  My friend Morgan made a pasta frittata the other day with leftover pasta, but she only added one egg and only had like 1/2 cup of pasta, but it looked crispy and delicious.

I mean, look at all those layers of pasta!  I used bucatini pasta – it has a tiny hole in the middle and it’s bronze cut, which means it has extra texture on the outside and held all that delicious cheesy sauce together.

Let’s talk hearts of palm pasta.  It’s not pasta.  Yes, it looks like pasta, but it will never taste like it.  That being said, I do love how I can bulk up meals with few calories and no added WW points.

Pasta Frittata

Is this a frittata?  Is it a quiche?  I have no idea but this pasta bake is delicious!

Ingredients

  • avocado oil spray
  • 1 cup cooked pasta (leftovers are great to use!)
  • 1 package Natural Heaven hearts of palm pasta, squeezed dry
  • 1 cup fat free cottage cheese, whipped with a stick blender
  • 4 eggs
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper
  • 1/2 cup sugar snap peas, sliced thin
  • 1 ounce grated Parmesan (I get great Parmesan cheese at Marianos)

Instructions

In an oven safe skillet, saute the sugar snap peas until browned – 2 to 3 minutes. Remove from pan. Add the Natural Heaven pasta and let it cook for 2 minutes, add the cooked pasta to the skillet. Add the sugar snap peas to the pan.

Meanwhile, mix the cottage cheese through pepper and whisk until combined. Pour that mixture over the pasta, top with the Parmesan cheese and bake for 30 minutes. Let cool 10 minutes before slicing.

Notes

1/4 of this would be delicious with a side salad and fruit.

On #teampurple it is 9 points for the whole skillet, 12 points on #teamblue and 20 points on #teamgreen because I had to count the eggs and cottage cheese.

How gorgeous does the bottom of that look?!  I have been loving sauteed sugar snap peas for a couple weeks now – but you can add any veggies in the dish you like.

These would be great for a meal prep, well, if you actually had to leave your house and meal prep, and this freezes well too.
